What is mussel Debearding?
The “beard” of a mussel is the clump of hair-like fibers that sprouts from the shell. Often farm-raised mussels will come debearded, but even so you’ll want to check that there aren’t some pesky ones hanging on. Once your mussels are cleaned and debearded, they’re ready to cook and eat.
Can you buy mussels already Debearded?
Mussels attach themselves to stable surfaces using thin, sticky membranes referred to as “beards.” Again, most farm-raised mussels will come debearded already, but the odds are good you ‘ll find a couple of stubborn beards left over.
Why are mussels Debearded?
Mussels cook quick and taste great with little prep, but cleaning and debearding them is crucial for the cooking process. If any are open before cooking them, tap them — if they close within 30 seconds, they’re still alive.
Can mussels suffocate?
As with clams and oysters, mussels must be cooked while they are still alive. A good fishmonger (or your local Whole Foods) will sell them loose or in mesh bags bathed in water and packed in ice. These mussels will suffocate in a short time.
Should I soak mussels before cooking?
Just before cooking, soak your mussels in fresh water for about 20 minutes. As the mussels breathe, they filter water and expel sand. After about 20 minutes, the mussels will have less salt and sand stored inside their shells.

Mussels will keep for 2 to 3 days, however, they are best when cooked as soon as possible. Shucked mussels that have not been cooked can be stored in water or their liquor, covered and refrigerated for up to 2 days.
